Sodium copper chlorophyll is a food additive made from mulberry leaves and silkworm sand by saponification and copper substitution. The main component is a mixture of two salts, sodium copper chlorophyll a and sodium copper chlorophyll b. It is easily soluble in water, almost insoluble in low alcohol, ether, petroleum ether, insoluble in chloroform andgrease. Slightly soluble in ethanol,soluble in glycerol and propylene glycol. The aqueous solution is transparent blue-green with no precipitation. Under acidic conditions (pH below 6.5) or in the presence of calcium ions, there is precipitation. It has good heat resistance, and when PH value is less than 6 precipitation occurs. The product has strong light resistance and decomposes when heated above 110℃. In case of hard water or acidic products or calcium-containing products, precipitation can occur. The maximum absorption peaks were found in the wavelength ranges of 405nm±3nm and 630nm±3nm.
