Gardenia Yellow:

Gardenia yellow is a food additive derived from the fruit of Gardenia jasminoides Ellis through extraction and refinement. It belongs to the carotenoid series and is also referred to as crogardenin or crocin. The primary components are crogardenin and crocroic acid, which are naturally occurring carotenoids and constitute the main pigments in gardenia fruit.

Gardenia yellow is easily soluble in water, ethanol, and propylene glycol, with a melting point of 186°C (decomposition). It is insoluble in oils. The aqueous solution exhibits weak acidity or neutrality, demonstrating excellent protein and starch staining properties. Its color tone remains stable across a wide pH range, particularly between pH 4.0-6.0 and 8.0-11.0. Under alkaline conditions, the yellow hue becomes more vivid. In neutral or alkaline environments, it shows superior light and heat resistance compared to acidic conditions, where it tends to brown more easily. Gardenia yellow exhibits good resistance to metal ions (except iron ions), salts, reduction, and microbial activity. The maximum absorption peak occurs at wavelength approximately 440 nm.
