Copper sodium chlorophyllin is a food additive processed from mulberry leaves and silkworm sand through saponification, copper substitution, and other steps. It is soluble in water, insoluble in ether and petroleum ether, and slightly soluble in ethanol and chloroform. Its aqueous solution is transparent and has a blue-green color, but it is unstable to light. It exhibits good heat resistance and forms a precipitate at pH values below 6.
