cocao husk pigment is a food additive derived from cacao shells, processed through extraction, purification, concentration, and drying using aqueous solutions. The primary coloring component consists of polyflavonoid glycosides. This additive readily absorbs moisture, dissolves in water and dilute ethanol, and exhibits a chocolate-brown hue in aqueous solution. It remains stable under near-neutral conditions; however, precipitation occurs when the PH drops below 4. As the pH increases, the color deepens but retains its tone. Cacao husk pigment demonstrates strong resistance to heat, oxidation, and light. It has excellent coloring properties for starches and proteins. Spectral analysis reveals a maximum absorption peak at 195 nm and a minor peak at 275 nm.
