Paprika oleoresin, also known as capsicum essence, is a food additive derived from the fruits of Capsicum annuum L. through extraction and refinement. It possesses the unique spicy flavor and heat sensation characteristic of chilies. Paprika oleoresin is almost insoluble in water and glycerol but soluble in oils, ethanol, and ethyl acetate. The maximum absorption peak is observed near wavelength 445 nm.
