β-carotene：
β-carotene is a food additive prepared by chemical synthesis from retinol acetate, β-viololanone or vitamin A acetate. It is slightly odorous, insoluble in water, propylene glycol, glycerin, acids and bases; Soluble in carbon dioxide, benzene, chloroform, ethane and olive oil and other vegetable oils, almost insoluble in methanol or ethanol. The dilute solution is orange to yellow, orange as the concentration increases (it may be slightly red due to the polarity of the solvent). It is unstable to light, heat, oxygen, acid resistance, more stable in weak alkaline, not affected by ascorbic acid and other reducing substances, heavy metals, especially iron ions can promote its fading. Beta-carotene is a conjugated double-bonded compound with a maximum absorption peak at wave length 455nm± 1nm.
