Beta-carotene is one of the carotenoids, which is an orange-colored lipophilic compound. It is the most widespread and stable natural pigment found in nature. It belongs to the family of natural chemicals, such as carotenoids or provitamin A carotenoids. It is abundantly present in plants, giving fruits and vegetables their vibrant yellow and orange colors. It is insoluble in water, propylene glycol, and glycerol, and almost insoluble in methanol and ethanol. Dilute solutions appear orange-yellow or yellow, and as the concentration increases, it turns orange to reddish-orange. It is unstable to light, heat, and oxygen, and it is not acid-resistant but relatively stable under weak alkaline conditions. It is not affected by reducing agents like ascorbic acid but can be faded by heavy metal ions, especially Fe3+. It exhibits good coloring properties in oily food products.

Application:
Beta-carotene is a common natural food coloring agent. It is known for its natural origin and safety. It is used for yellow or orange color enhancement in food. For example, in emulsified fat products (excluding butter and concentrated butter), flavored fermented milk, fortified milk, fortified milk powder, and fortified cream powder, ready-to-eat flavored food products with milk as the main ingredient (excluding ice cream and flavored fermented milk), fat emulsion products other than category 02.02, including mixed and/or flavored fat emulsion products, fat-based desserts, frozen beverages (excluding edible ice), preserved fruits, liquid compound seasonings (excluding 12.03, 12.04), jellies, plant-based beverages, convenient rice and noodle products, frozen rice and noodle products, grain and starch-based desserts (such as rice pudding, tapioca pudding), baked goods, biscuits, fruit jam products, the maximum usage level is 1.0g/kg. In sugar and chocolate coating, decorative candies (such as crafted shapes or cake decorations), toppings (non-fruit materials), and sweet sauce products, the maximum usage level is 20g/kg. In processed meat products (raw meat with added seasoning) and cured meat products, the maximum usage level is 0.02g/kg.
