(Gardenia blue) is a food additive produced from the fruits of Gardenia jasminoides Ellis. It is processed through extraction with water or edible ethanol, enzymatic hydrolysis (β-glucosidase), addition of edible amino acids, and refinement. The colorant is widely used in many countries and has been approved as a natural food colorant in China. It is listed in the GB2760-2014 "National Food Safety Standard for the Use of Food Additives." On June 25, 2012, the first product standard for Gardenia blue, GB28311-2012 "Food Additive Gardenia Blue," was published, filling the gap in the national product standard.
Characteristics: It has a slight distinctive aromatic odor and appears as a blue to deep purple-blue powder, granules, or liquid.
Application:
Gardenia blue provides a vibrant color, strong coloring ability, and good light resistance and heat stability. It remains stable within a pH range of 4 to 10. The specific industry categories and usage levels can be referred to in the "GB2760-2014 National Food Safety Standard for the Use of Food Additives." It can be used in frozen beverages (excluding edible ice) and baked goods at a maximum usage level of 1.0g/kg. The maximum usage level in roasted nuts and seeds (limited to fried nuts and seeds), convenience rice and noodle products, cereal product fillings, seasoning products (excluding salt and salt substitutes), protein drinks, and solid beverage products is 0.5g/kg. In flavored beverages (limited to fruit-flavored beverages) and formulated wine products, the maximum usage level is 0.2g/kg.
